Ingredients

  • 1 green bell pepper
  • 1 red bell pepper
  • 1/2 cup onion
  • 1/4 cup jalapeno
  • 1/2 cup canola or olive oil
  • 1/2 cup apple cider vinegar
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon fresh ground pepper
  • 15-ounce can black beans
  • 15-ounce black-eyed peas
  • 1-2/3 cup frozen corn

Preparation

  1. Finely chop green pepper, red pepper, and onion. Remove the seeds from the jalapeno and finely chop the pepper. Combine oil, vinegar, sugar, salt, and pepper in a medium saucepan over medium-low heat. Stir together and simmer for 3 minutes until sugar is dissolved. Remove from the heat and set aside to cool.
  2. Meanwhile, rinse and drain the black beans and black-eyed peas and then combine with corn in a large bowl. Add the onion, bell peppers and jalapeno, then pour in the vinegar mixture and stir until well combined.
  3. Serve the Texas caviar immediately with low-sodium tortilla chips for a snack or with rice or noodles for an entrée. Cover and store remaining caviar in the refrigerator.

Helpful hints

  • You may leave out the jalapeno and substitute sriracha. This recipe was tested using Fix® Sriracha Hot Sauce. Look for a brand that is lowest in sodium.
  • The recipe is higher in potassium. However, with a whole food like beans your body may not absorb all the potassium. Consider the potassium when you are planning your meals for the day and what your blood potassium level is.
  • Can corned that is drained and rinsed can be used in place of frozen corn. However, it may add more sodium to the recipe.
