Glazed Carrots

Ingredients

  • 2 medium carrots
  • 1 tablespoon sugar
  • 1 teaspoon cornstarch
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 cup apple juice
  • 2 tablespoons butter

Preparation

  1. Slice carrots into 1-inch thick slices. Place carrots and 1/4 cup water in a pot. Cover and cook until slightly tender.
  2. Mix together sugar, cornstarch, salt, ginger, apple juice and melted butter. Pour mixture over carrots and water.
  3. Cook, stirring occasionally, for 10 minutes or until mixture thickens. 

Helpful hints

  • Fresh carrots are best but you can substitute frozen carrots.
  • If desired, replace ginger with ground cinnamon.
