Ingredients
- 1/2 tablespoon low sodium coconut aminos
- 1 tablespoons crushed ginger
- 1 tablespoon apple cider vinegar
- 1/4 cup low sodium egg or rice noodles
- 1/4 cup frozen peppers and onion blend
- 1/4 cup cooked shredded chicken
Optional Toppings:
- 1 slice of lime
- 1 Tbs Green onion
- 1 Tbs Cilantro
- 1 Star Anise * remove before consuming
Preparation
- Carefully add 8 ounces of very hot water to a wide mouth 16 ounce mason jar.
- Season the water by adding the first three ingredients: coconut amino, crushed ginger and apple cider vinegar.
- Next layer in the noodles, cooked shredded chicken and frozen vegetables. Tighten lid and let stand ten minutes or until noodles are tender. If jar has cooled, remove the lid and microwave to preference for warmth, 30 seconds at a time. Add additional toppings of cilantro, green onion and lime, if desired.
Helpful hints
- This recipe is designed to limit fluid to 8oz. It may help to invert the mason jar a few times during the process in order to cover all the ingredients.
- If using additional toppings, this adds a small amount of potassium, approximately 22 mg of potassium.
