Ingredients

  • 12 ounces lobster meat
  • 1/3 cup celery
  • 3 tablespoons mayonnaise
  • 3 tablespoons lemon juice
  • 1/4 teaspoon hot sauce
  • 4 split-top hotdog rolls
  • 2 tablespoons unsalted butter
  • 4 lemon wedges

Preparation

  1. Steam lobster until meat is opaque, about 5 to 6 minutes. Let cool then cut lobster into bite-sized pieces. Finely chop celery while lobster is cooking.
  2. Combine mayo, celery, lemon juice and hot sauce. Add lobster meat and toss to coat.
  3. Split buns and spread with butter. Toast in a skillet.
  4. Make lobster rolls by dividing the lobster mixture between the 4 buns. Serve with lemon wedges.

Helpful hints

Buy regular hotdog buns if split-top hotdog rolls are unavailable.

Look for fresh or frozen lobster meat or lobster tails, or cook a whole lobster. Two 6-ounce lobster tails work great.

Lobster meat is naturally high in sodium. Select lower sodium foods for your remaining meals to stay within your sodium limit.
