Ingredients
- 1 fresh peach
- 1 tablespoon fresh shallot
- 3 tablespoons champagne vinegar
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lemon juice
- 1/2 tablespoon dried basil
Preparation
- Peel the peach and remove the pit. Dice the shallot.
- Place all dressing ingredients into a small blender or food processor. Blend until smooth.
- Store dressing in an airtight container in the refrigerator for up to 1 week.
Helpful hints
- White vinegar or apple cider vinegar may be substituted for champagne vinegar.
