Ingredients

  • 1 medium cucumber
  • 1/3 cup sour cream
  • 2 tablespoons white vinegar
  • 1 tablespoon sugar
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh dill weed 

Preparation

  1. Thinly slice cucumber.
  2. Mix together sour cream, vinegar (or lemon juice), sugar (or sweetener) and pepper.
  3. Combine mixture with cucumbers. Chill before serving.
  4. Garnish with fresh chopped dill weed if desired.

Helpful hints

  • Replace vinegar with lemon juice if preferred.
  • For a variation add 2 tablespoons chopped onion or chives.
  • For a lighter version, substitute fat-free sour cream instead of regular sour cream.
