Ingredients

  • 4 cups coleslaw mix
  • 1/2 cup fresh cilantro
  • 1/4 cup red bell pepper
  • 2 tablespoons olive oil
  • 1/4 cup fresh lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder

Preparation

  1. Chop cilantro. Finely dice bell pepper.
  2. Toss coleslaw mix, cilantro and red pepper together.
  3. Whisk olive oil, lime juice, cumin and chili powder together in a small bowl.
  4. Pour dressing over slaw mixture, toss until coated and serve.

Helpful hints

  • Use ancho chili powder if you like it spicy.
