Ingredients
- 4 cups coleslaw mix
- 1/2 cup fresh cilantro
- 1/4 cup red bell pepper
- 2 tablespoons olive oil
- 1/4 cup fresh lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
Preparation
- Chop cilantro. Finely dice bell pepper.
- Toss coleslaw mix, cilantro and red pepper together.
- Whisk olive oil, lime juice, cumin and chili powder together in a small bowl.
- Pour dressing over slaw mixture, toss until coated and serve.
Helpful hints
- Use ancho chili powder if you like it spicy.
