Ingredients

  • 3 ounce-box cook and serve vanilla pudding mix
  • 1 2/3 cup almond milk, unenriched
  • 1 teaspoon pumpkin pie spice
  • 1 scoop whey protein powder

Preparation

  1. In a medium sauce pan combine the pudding mix and almond milk.
  2. Bring to boil over medium heat, stirring constantly. Stir until pudding thickens.
  3. Remove from heat and mix in protein powder and pumpkin pie spice. Mix completely.
  4. Place plastic wrap directly on surface of pudding and cool in fridge for at least 3 hours or overnight. Pudding will thicken as it cools.
  5. Stir before serving chilled pudding.

Helpful hints

  • Change flavor of pudding mix for variety.
  • The addition of whey protein powder makes the protein content similar to pudding made with milk.
  • Protein powders vary in scoop size and amount of protein. Analysis uses EAS whey protein powder.
  • Do not substitute instant pudding mix. It is very high in sodium.
