Crepes with Mixed Berries

Ingredients

  • 1/2 cup all-purpose flour
  • 2 large egg whites
  • 1/2 cup low-fat milk
  • 1 tablespoon canola oil
  • 1/2 cup blackberries
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/2 cup strawberries
  • 1/2 tablespoon powdered sugar

Preparation

  1. Slice the strawberries. In a medium bowl mix berries together.
  2. Whisk together the flour, egg whites, milk and oil in a large bowl until smooth.
  3. Lightly coat a skillet with cooking spray and place over medium heat. Pour 1/4 cup of the batter into the skillet. Tilt the pan in a circular motion to allow the batter to spread to the edges. Cook until the bottom is light brown, about 2 minutes.
  4. Flip the crepe  and cook another 1 to 2 minutes. Fold the crepe in half and remove with a spatula to a serving plate.
  5. Place 1/2 cup mixed berries on top of each crepe, and then dust with confectioners’ sugar and serve.

Helpful hints

  • If desired, prepare crepes with fruit inside and powdered sugar on top.
  • Frozen mixed berries can be used if fresh are out of season.
