Ingredients
- 1 teaspoon onion
- 1 teaspoon green bell pepper
- 2 large eggs
- 1 teaspoon butter
- 1/8 teaspoon black pepper
Preparation
- Plug in waffle iron to heat.
- Finely chop onion and bell pepper. Melt the butter.
- In a bowl, lightly beat 2 eggs. Add in finely chopped vegetables, melted butter and black pepper.
- Spray waffle iron with cooking spray. Pour entire contents into waffle iron.
- Cook for 2 minutes, or follow waffle iron directions if your waffle iron has a “ready” indicator light.
Helpful hints
- It is important not to whip too much air into the eggs.
