Ingredients
- 1/3 cup unsalted butter
- 1 cup crushed pineapple in juice
- 6 maraschino cherries
- 1/3 cup sugar
- 2 large eggs
- 2-1/4 cups all-purpose flour
- 1 tablespoon baking powder
Preparation
- Set butter out to soften. Drain the pineapple. Chop the cherries.
- With a mixer, beat sugar and butter until light and fluffy. Add eggs and mix well.
- Mix flour and baking powder together.
- Combine sugar and flour mixtures and blend. Add pineapple and cherries and mix to combine. Pour into a greased 9 x 5-inch pan. Bake at 350° F for 1 hour.
- Cool for 10 minutes, then remove loaf from pan and transfer to a wire rack to cool. Cut into 15 slices.
Helpful hints
- Make extra loaves and freeze until ready to share or enjoy.
- To reduce carbohydrates use a granular sugar substitute.
