Chocolate Peanut Butter Muffins

Ingredients

  • 1/2 cup butter
  • 1/2 cup honey
  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup creamy peanut butter
  • 4 large eggs
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips 

Preparation

  1. Preheat the oven to 350° F. Line a muffin tin with paper liners.
  2. Melt butter and honey together.  Whisk in cocoa powder and peanut butter until smooth.
  3. Whisk in eggs and baking soda. Mix in chocolate chips. Pour evenly into muffin tin.
  4. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.

Helpful hints

  • If desired use almond butter in place of peanut butter. Almond butter has 24 mg more phosphorus and 16 mg more potassium per serving than peanut butter.
  • If preferred use reduced-fat peanut butter. This change will add approximately 4 grams of carbohydrate per serving.
  • Chocolate and peanut butter are high in potassium and phosphorus. The secret to including in a kidney diet is the portion--1 small muffin. Ask your dietitian if you need a phosphate binder with this muffin.
